Seafood is one of my favourite things to eat, I just love it. This simple fish stew was so easy to make and even better was cooked in one pot. It’s super healthy and full of gorgeous flavour. I served it with crusty bread, but you could serve it with plain rice.

INGREDIENTS
1 medium red onion - finely chopped
3 garlic cloves - finely sliced
1 1/2 tsp smoked paprika
400g tin chopped tomatoes
1/2 tin water
450g skinless white fish fillets, such as cod or haddock, chopped into large chunks
175g raw king prawns
200g mussels, cleaned and debearded (discard any that don’t close when firmly tapped)
2 tablespoons chopped parsley

METHOD
Sauté the onion until soft, then add the garlic for 2 minutes. Add the paprika followed by the tomatoes. Fill the tin 1/2 way up with water and add that too. Simmer for 20 minutes. Add the fish, Mussels and prawns. Stir once (but not again) cover with foil or a lid and simmer for 10 minutes. Stir in chopped parsley. Serve with crusty bread
