Fig, Parma Ham, Buffalo Mozzarella & Pistachio Salad

The great thing about this time of year is the fresh produce is amazing and it needs very little doing to it to taste fantastic. This salad can be rustled up in less than 10 minutes and is absolutely delicious to eat. Who’s going to try this one?

Serves 2 as a main 4 as a starter

⠀⠀⠀⠀⠀⠀⠀⠀⠀

INGREDIENTS

Dressing

1 clove garlic - crushed

1 teaspoon honey

3 tablespoons olive oil

1 tablespoon White wine vinegar

Salt and pepper

⠀⠀⠀⠀⠀⠀⠀⠀⠀

1 bag salad leaves ( mine contained edible flowers)

4 fresh figs

1 pack Parma ham

1 ball buffalo mozzarella

1 tablespoon pistachio nuts

Basil to serve

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

Shake the dressing ingredients in a jar and set aside.

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Arrange the salad ingredients on a large platter. Tear open the mozzarella and spread out over the leaves. Add the figs, Parma ham, nuts and basil and drizzle with the dressing.
