Last weekend I had a house full and I had made a rich beef stew for supper, so I need something meat free and quick for lunch. I made 2 of these tarts which fed 7 of us easily. They were ready in under 20 minutes and my guests felt like I’d gone to a lot of effort.

INGREDIENTS
Makes 1 tart
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 roll or shop bought ready rolled pastry
1-2 tablespoons onion chutney
150g goats cheese - sliced
2-3 fresh figs - each sliced into 6-8 wedges
1 large handful of spinach
1 egg - beaten
Parchment paper

METHOD
Preheat the oven to 200 degrees
Open up the pastry and lay on a piece of parchment paper on a baking tray. Score a border roughly 1 inch around the perimeter. Add the chutney inside the border a spread evenly. Spread out the rest of the ingredients inside the border. Brush the perimeter Roth egg and into the oven for 15-20 minutes.
