Don’t you just love it when you can feed a family of 4 for next to nothing? This meal came in at approximately 60p a person and was thoroughly enjoyed by all. To add to the list of pro’s it was made with very few ingredients and prepared in under 15 minutes. ⠀

Serves 4⠀
INGREDIENTS
300g dried pasta⠀
3 cloves of garlic crushed ⠀
2 shallots finely chopped ⠀
250g mushrooms sliced ⠀
25g Parmesan cheese⠀
2 heaped tablespoons Tims Dairy Natural Yogurt or creme fraiche ⠀
METHOD

Cook the pasta in a pan of boiling salted water according to the packet instructions, then drain, reserving a mugful of cooking water. Meanwhile, sauté the shallots in olive oil for 5 minutes. Add the garlic and stir. Now add the mushrooms. Season with sea salt and pepper, and cook for roughly 5 minutes, stirring regularly.⠀

Toss the drained pasta into the mushroom pan with a splash of the reserved cooking water. Grate in most of the Parmesan and stir in the yogurt gently heat and finish with a final grating of Parmesan.⠀
