Easy Banana Bread


No need for any gadgets with this simple recipe, just a large bowl, a fork, a spoon and a 230ml cup. By melting the butter there is no need to vigorously cream together butter and sugar, this recipe just requires a little stirring which makes it the perfect recipe for children to make. In my opinion there is no point in just making one loaf as this delicious bread will be gone in minutes and bananas bread stays moist for a few days. It also freezes very well.


INGREDIENTS for 1 loaf

2 to 3 very ripe bananas - mashed

1/3 cup melted butter

1 teaspoon baking powder

3/4 cup sugar

1 large egg - whisked

2 teaspoon vanilla extract

1 1/2 cups of self raising

1 cup sultanas or raisins

1 loaf tin


METHOD

Preheat the oven to 170 degrees.

Mash the bananas in a large bowl. Pour in the melted butter and mix. Add the baking powder and distribute thoroughly. Stir through the sugar, the eggs, vanilla, the flour and lastly the dried fruit until totally combined. Pour into a loaf tin and cook for 50-55 minutes or until cooked through. Test with a cocktail stick. If dry when removed then it’s cooked.
