Ready with in 30 minutes, this healthy yet hearty fish dish will really hit the spot. You can use any white firm fish such as Pollock, Haddock or Hake. When I made this sauce I doubled up the quantities and saved half to use as a delicious pasta sauce.

INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
600-700g cod fillet (skin removed) cut into 4
1 tin tomatoes
1 red onion - finely chopped
4 cloves garlic - crushed
250g mixed olives - drained @olivesfromspainuk
4 red peppers from a jar - drained and sliced
Basil/Greek Basil

METHOD
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pre-heat the oven to 210 degrees.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by sautéing the onion until soft. Now add the garlic and cook for 2 minutes. Add the olives, peppers and tomatoes (check the seasoning) bring to a simmer and cook for 20 minutes. Add a little water to loosen if necessary.

Add the cod fillets to the pan seasoning them generously and into the oven for 10-13 minutes.
Sprinkle with basil and serve with crusty bread, rice or new potatoes.
