I made one of these lovely Traybake’s last year with parsnips instead of potatoes. Many of you tried it so I thought I should make one again this year. This is Christmas dinner (ok it’s not turkey) cooked in one pan..... what not to love? ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Serves 4
INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1kg Chicken Thighs
300g brussel sprouts trimmed and washed and halved
200g new potatoes - quartered
1 onion - roughly chopped
12 mini pigs in blankets - I used ready made
4-5 garlic cloves - left whole
Cranberry sauce to serve - recipe is on my website

METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add everything except the sprouts and cranberry sauce, season and roast for 20 minutes. Remove from the oven and add the sprouts and roast for another 20-30 minutes.
