A friend of mine sent me a message and asked if I would come up with a few recipes that could be made using store cupboard ingredients. Most of us will have onions, garlic, a tin of tomatoes and some sort of beans in our cupboard. Chorizo has a fairly long life so there is often a pack of that lurking in my fridge. This recipe is full of flavour and a lovely way to use up ingredients in your kitchen making it a budget friendly meal!

Serves 4
INGREDIENTS
2 red onions - chopped
1 red pepper - sliced
4 cloves garlic - crushed
200g cooking chorizo - sliced
1 tablespoon smoked paprika
1 tin tomatoes
1 jar butter beans (approximately 500g) - drained

METHOD
Sauté the onions until soft the. Add the pepper, garlic and chorizo. Season generously. Cook until the chorizo starts to release it’s gorgeous flavour - roughly 5 minutes. Add the smoked paprika and stir, followed by the tomatoes. Bring to a simmer and cook with a lid on for approximately 45 minutes. Add the butter beans and cook for another 15 minutes. Loosen with water if needed.
