Chicken, Vegetable & Orzo Soup

I put this soup on my stories last weekend and so many of you have asked for the full recipe so here it is. It’s certainly soup season at the moment what with this gloomy weather and all those nasty bugs flying around. Not only are soups super healthy and bang on plan, but they are delicious and kids seem to absolutely love them. They are also really budget friendly - this one fed a family of 4 for under £5. Oh yes and they can be cooked in one large pot, so they create very little washing up 🙌

INGREDIENTS

8 chicken thighs or drumsticks

2-3 onions - finely chopped

4 cloves garlic - crushed

1 whole celery - finely chopped

2 teaspoons plain flour

1 litre chicken stock

1 cup dried orzo

1 cup full frozen peas

1 cup full frozen edamame beans

METHOD

Brown the seasoned chicken and set aside. Sauté the onion until soft and golden. The more caramelised (not burnt) the onion the more flavour the soup has. Add garlic and celery and cook for 5 minutes. Stir through the flour. Now pour in the stock and return the chicken (plus any juices) to the pan. Bring to a very gentle simmer and cook for 1-1.5 hours. Add the orzo and frozen veg 5 minutes before the end in the cooking time. Check for seasoning and serve.
