I’m beginning to get my cooking mojo back thank goodness. For a while there I was lacking any imagination and cooking had become a complete chore rather than something I did to relax and feel happy. Here is a classic combination of ingredients literally thrown together in one pan and cooked.... that’s it! I found a bunch of british asparagus in the supermarket this week which was a lovely treat so had to include them. Green beans or spinach wilted in at the last minute would be delicious alternatives.

Serves 4
INGREDIENTS
8 chicken thighs
100g cooking chorizo - sliced
1 red onion - cut into 8 wedges
4 cloves garlic - whole with skin on
300g new potatoes - sliced
8 asparagus spears - washed, woody ends removed and cut in half
1-2 teaspoons sweet smoked paprika
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
Preheat the oven to 210 degrees.
Add all of the ingredients except the asparagus to a large roasting pan. Drizzle with oil, season generously and sprinkle with smoked paprika. Roast for 35-45 minutes basting once if you remember. Throw in the asparagus for the last 10 minutes of cooking time.
