In the UK we love BBQ season, obviously we hope for glorious sunshine ☀️ which doesn’t always happen, but that doesn’t stop us Brits from cooking on the grill! As you know I enjoy simplifying meals where ever possible. These colourful kebabs are made using the waxy potatoes from blas_y_tir , chorizo, chicken, peppers and courgettes, they include 3 of your 5 a day and are pretty much a balanced meal on a stick!

Serves 2-3
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Marinade
1 clove garlic - crushed
3 teaspoons smoked paprika
Juice 1/2 lemon
1 tablespoon olive oil
Salt and pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
300g Chicken breast mini fillets
150g Pembrokeshire Early Potatoes
3-4 small courgettes - cut into 1.5 cm discs
1 red pepper - roughly chopped
150g cooking chorizo - cut into 2cm chunks
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
Mix the marinade ingredients together and add the chicken, leave for 30 minutes.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Boil the potatoes for 10-15 minutes or until cooked through.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Skewer the the ingredients :-
Potatoes, chorizo, chicken, courgette, pepper and repeat. Drizzle with oil, season and on to the BBQ for 5-7 minutes on each side.
