Whilst working in America during my 20’s, I must have eaten hundreds of Caesar salads!
In some amazing restaurants the salad dressing would be made from scratch by a waiter at my table, and at other restaurants, it had clearly been poured from a bottle 😣
Always one to simplify a recipe, my version cheats slightly and uses shop bought mayo. It’s honestly delicious, so you really must try.
Serves 4
INGREDIENTS
Dressing
3 tablespoons mayonnaise
2 cloves garlic - crushed
Juice 1/2 lemon
1 tablespoon olive oil
3 anchovies - finely chopped or minced
1 tablespoon grated Parmesan
2 teaspoons Worcester sauce
2- 3 romaine or cos lettuces - leaves separated
4 cooked chicken breasts
8-10 anchovy fillets
Croutons - (chop up old bread, drizzle with oil,
Season and bake for 5-10 minutes)
Parmesan shavings you finish (which I forgot in the picture!)
METHOD
Mix the dressing ingredients together in a bowl. Arrange the salad ingredients in a large bowl and toss with the dressing. Season with salt & pepper.
