A lovely Middle Eastern inspired Traybake that is ridiculously simple to prepare and very tasty to eat. This recipe can literally be thrown together in the morning left in the fridge all day and simply cooked in the evening. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serves 4⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1-2 tablespoons chermoula paste ⠀⠀⠀⠀⠀⠀⠀⠀⠀
8 chicken thighs ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 red onions - cut into 8 wedges each ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cloves garlic - crushed ⠀⠀⠀⠀⠀⠀⠀⠀⠀
8-10 olives⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 lemon sliced⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 chilli - sliced or 4 whole⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pomegranate seeds & coriander to serve⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 190 degrees.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Coat the chicken in the chermoula paste and add to a large roasting tray. Throw in all the other ingredients. Drizzle with oil and season generously. Roast for 35-45 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Sprinkle with coriander and pomegranate seeds.⠀⠀⠀⠀⠀⠀⠀⠀
