It wouldn’t be Christmas without a retro trifle and it makes a nice alternative from all those dried fruit desserts.
I felt a bit of a fraud as I placed all of these shop bought ingredients into my trolley in the supermarket, but if there is ever a good time to cheat, it’s now! So if you fancy a bit of construction rather than cooking, this is the pudding for you. You can use any liqueur you like, I always have something lurking at the back of the drinks cabinet that’s perfect for this occasion.
INGREDIENTS
2 shop bought jam Swiss rolls
1kg Fresh Shop bought custard
1/2 jar strawberry jam
300ml whipping cream
1 punnet strawberries hulled and sliced
4 tablespoons sherry
Cherries to decorate
METHOD
Slice the Swiss roll and place it at the bottom of a large bowl. Drizzle the sponge in sherry. Spread the jam over the Swiss roll. Now layer the strawberries on top of the jam. Pour in the custard. Whip the cream and spread over the custard. Chill until needed.
