Here’s another way to use those lovely Cajun spices. A real family pleaser and as always so easy to make
Serves 4
INGREDIENTS
800-1kg chicken drumsticks
Marinade
1 tablespoons Cajun spice mix
Juice of 1 lime
2 teaspoons honey
2 tablespoons olive oil
Salt & pepper
Salsa
200g pineapple - finely chopped
1/2 small red onion - finely chopped
2 tablespoons chopped coriander
1 red chilli - finely chopped
Juice 1/2 lime
1 tablespoons olive oil
Salt & pepper
METHOD
Preheat the oven to 200 degrees (conventional) 180 degrees (fan)
Mix the marinade ingredients together in a large bowl and add the chicken. Marinate for 30 minutes if you can.
Add to a roasting tin, with all of the marinade. Season and roast for -
35-45 minutes drumsticks or thighs
20-30 minutes breasts
Remove from the oven and drizzle with the salsa.
