Burrata Salad, with Griddled Nectarines & Herby Dressing

This is one of the many recipes that I have created for @hunterandgatheruk ‘s website and I couldn’t resist sharing it. You can sear the nectarines on the bbq, pan fry them or griddle them, whichever way, they’ll be delicious. The herby dressing is amazing and so worth making a batch for the fridge, which should keep for 3 days and is delicious with so many things. Who’s going to try this?

Serves 4

INGREDIENTS

2 burrata

2 nectarines or peaches - halved and stone removed

1 bag salad leaves

1 avocado - peeled and sliced

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Place the nectarines on a hot griddle for 4-5 minutes. Drain the burrata. Assemble the salad ingredients. Tear each burrata in half and scatter the nectarines.

Drizzle with the herby dressing.

Herby Dressing

⠀⠀⠀⠀⠀⠀⠀⠀⠀

INGREDIENTS

25g basil leaves

10g dill

10g flat leaf parsley

3-4 tablespoons avocado oil

1 & 1/2 tablespoons apple cider vinegar

1 teaspoon honey

Salt & Pepper

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

Blitz the ingredients together in a small blender or bullet. Add more oil to loosen if necessary.
