My kids love an old school pud and I think if asked they’d both agree crumble is their favourite. Delicious with apples, pears, rhubarb, plums and blackberries. This lovely pudding is classic for good reason. Serve with cream, creme fraiche, vanilla ice cream or custard.
Crumble topping
170g plain flour
110g butter - cubed and cold
110g golden caster sugar
Filling
3 bramley cooking apples - peeled, cored and roughly chopped
150g blackberries
1/4 lemon - squeezed
3-4 tablespoons caster sugar
METHOD
Preheat the oven to 170 degrees c fan 190 degrees c conventional.
Mix the crumble ingredients together in a bowl using your fingers. Try to have cold hands if possible! Mix until you have the consistency of breadcrumbs.
Add the apples and sugar to aven dishes and mix. Squeeze with lemon and dot the blackberries evenly amongst the apples. Top with the crumble and pat down with a fork. Sprinkle with a little extra sugar for crunch.
Cook in the oven for 35- 40 minutes or until golden.
