I remember my mum making this retro dish in the 80’s and well into the 90’s. It is what it is, but I absolutely love it! I have used fillet steak, but actually it can easily made with chicken breast, or pork fillet, but it will need cooking more in the beginning.
Serves 4
INGREDIENTS
800g lean steak - fillet/sirloin/bavette - sliced into 3cm strips
1 medium onion - finely chopped
4 cloves garlic - crushed
1 punnet mushrooms - sliced
1 teaspoon smoked paprika
300ml sour cream
1-2 teaspoons Dijon mustard
1-2 tablespoons Worcester sauce
Salt & pepper
Herbs to serve
METHOD
Season the beef and sear in a super hot pan for a few minutes on each side (don’t worry if it’s really rare at this point ) then set aside on a plate. Turn down the heat and add the onions to the same pan. Cook until soft and caramelised. Add the garlic and mushrooms and cook through. Spoon in the paprika and stir, followed by the cream, mustard and Worcester sauce. Check for seasoning. Warm through and return the beef to the pan. Make sure everything is hot, but don’t over cook. Serve with rice, pasta, potatoes or if you are Charlie.... chips!
