As you know I am a huge aubergine fan and I use it in so many recipes. Aubergine takes on flavour brilliantly and It’s a fantastic food for vegetarians as it’s hearty and for filling. Paired with this delicious Chavroux goats cheese and the tomato and basil, it’s an absolute winning combination. Ready in less than 15 minutes it’s definitely worth a try.

Serves 2 as a starter or light lunch
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 aubergine - sliced into discs
1 pack of Chauvroux - sliced into discs
1-2 large tomatoes - sliced
2 handfuls of basil leaves
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Dressing
1 clove crushed - crushed
1 teaspoon honey
2 teaspoons balsamic vinegar
1 tablespoon olive oil
Salt & Pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix the dressing ingredients in a jar and set aside.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Season and pan fry the aubergine in olive oil until golden on both sides. Slice the tomatoes and drain on kitchen paper. Stack the ingredients starting with :-
Aubergine
Goats cheese
Basil
Tomato
Repeat once more.

Roast in the oven for 8-10 minutes.
