Another hit with the whole family! Honestly kids love this marinade on salmon so it’s definitely worth a go. I was going to add chilli, but Charlie isn’t a fan and I only had an old one which would have been to hot (the heat intensifies as they get older) but feel free to add chilli, coriander or spring onions to finish.

Serves 4
INGREDIENTS
Marinade
3 teaspoons miso paste
Juice 1/2 lime
1 clove crushed garlic
1 tablespoon soy sauce
2 teaspoons honey
2 teaspoons sesame oil
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 medium onion - sliced
3 bulbs pak choi - washes and quartered lengthways
500g cooked rice (2 pouches)
4 salmon fillets
Optional sesame seeds
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
Preheat the o en to 210 degrees.
Add the onion to a large pan, drizzle with oil and season. Place in the oven for 10 minutes. Now add the pak choi drizzle with a little oil and into the oven for another 10 minutes. Set aside the pak choi and stir through the rice into the onions. Place the pak choi and salmon on top. Drizzle with the marinade, sprinkle with sesame seeds and into the oven for the final 10 minutes.
