This is a really good cheat which works brilliantly and is perfect for a quick meal during lockdown. Normally I make my meatballs from scratch, but I wanted to create something super simple so I thought I’d experiment with shop bought. All cooked in one pan and budget friendly, it’s absolutely one to try.

Serves 4
INGREDIENTS
600-700g pork meatballs
1 red onion - finely chopped
4 cloves garlic - crushed
3 teaspoons grated ginger
250g pak choi - quartered lengthways
Lime - cut into wedges
1 chilli - sliced
1 tablespoons sesame seeds - optional
2 spring onions - finely chopped

Sauce
4 tablespoons soy sauce
2 tablespoons mirin or 2 teaspoons cider vinegar
2 tablespoons honey
1 1/2 tablespoons sesame oil

METHOD
Cook the meatballs in a large pan until add almost cooked through then set aside. Add onion to the same pan and cook until soft. Add ginger and garlic and cook for 1 minute. Return the meatballs to the pan and stir through the sauce. Nestle in the pak choi and cover with a lid or foil and cook on a low heat for 5 minutes.
Sprinkle with sesame seeds, chilli, spring onions and lime wedges. Serve with rice or noodles.
