I actually think this could be my favourite steak recipe. We’ve had it twice in one week as my first photograph was disappointing 🙄 so thought I’d better make it again. It’s really all about the marinade which doubles up as a dressing. You could use any cut of steak for this and it would still be delicious.⠀

Serves 2⠀
⠀
INGREDIENTS ⠀
2 fillet steak approximately 4cm thick⠀
3 Pak Choi bulbs⠀
⠀
Dressing marinade ⠀
⠀
2 cloves garlic crushed ⠀
1 red chilli chopped ⠀
4 cm piece of ginger grated ⠀
1 spring onion finely chopped ⠀
1 tablespoon chopped coriander ⠀
Juice of 1 lime⠀
2 tablespoons soy sauce ⠀
2 tablespoons sesame oil ⠀
1 teaspoon honey ⠀

METHOD ⠀
Mix the dressing ingredients together in a bowl. Pour a 1/3 of the dressing over the steaks, season and leave for 30 minutes.⠀

In a large pan heat up a little oil. When very hot add the steaks. Cook on each side for 2 minutes. Cradle with foil, turn off and remove from the heat. Leave the steak in the hot pan for 5 minutes. The residual heat should mean they are beautifully pink (fingers crossed) and rare. ⠀

Slice the Pak Choi in half lengthways and pan fry in ground nut oil until just soft. ⠀
Slice the steak and drizzle both the steak and Pak Choi with the rest of the dressing. Serve with noodles. ⠀
