Need a meal that’s going to impress, but short on time? Then this is the recipe for you this Bank Holiday weekend. Ready in under 30 minutes, healthy and absolutely delicious. I loved serving this whole side of salmon, placing it in the centre of the table and watching everyone get stuck in. Served here with a pickled cucumber salad and jasmine rice. INGREDIENTS
Marinade
3 teaspoons white miso paste
1 tablespoon sesame oil
2 teaspoons honey
2 tablespoons soy sauce
Juice 1/2 lime
1 clove garlic - crushed
1 teaspoon grated ginger
1 half side salmon - de-boned & skin on
1 thumb side piece of ginger - cut into matchsticks
2 spring onions - finely sliced
1 tablespoon fresh coriander leaves
1 chilli - finely sliced
Lime wedges to serve
METHOD
Preheat the oven to 200 degrees
Mix the marinade ingredients together in a bowl. Spread on the salmon and leave for 15 minutes. Add the spring onion, ginger matchsticks, chilli and coriander on top, leaving a few for later. Season and into the oven for 15-20 minutes. Mine was ready in 15.
Sprinkle with the remaining garnish.
Serve with rice or noodles.
