15 minute Sea Bass with Spinach & Lentils



We are all cooking tremendous amounts at the moment and it’s great to find a healthy, restaurant style meal that can be cooked quickly and easily. I’ve said it many times, but these pre-cooked pouches of lentils from @merchantgourmet are so useful and there are so many different varieties to try. For this recipe any kind of lentils can be used, rice, quinoa, couscous, mixed grains would all work beautifully. Any fish would work, or you could top the lentils with tofu, chicken breast or cheese. If you can’t find spinach, then how about adding Swiss chard, cavolo nero or frozen peas? Another versatile recipe that you can make your own. ⠀⠀⠀⠀⠀⠀⠀⠀

Serves 2⠀

INGREDIENTS ⠀

2 pieces of Sea Bass or any fish

2 shallots or 1 onion finely chopped ⠀

1 packet of cooked Merchant gourmet puy lentils⠀

A dash of stock

1 small bag fresh spinach ⠀

3 cloves crushed garlic ⠀

METHOD

Roast the vine tomatoes drizzled with a little oil, salt and pepper for 10 mins in a hot oven of 210 degrees. ⠀⠀

Sauté the shallot or small onion until soft. Now stir in the garlic for 2 minutes. Season and add a packet of pre-cooked lentils. Gently warm through, then wilt a small pack of fresh spinach into the lentils.  Season the fish then sear it skin side down in a smoking hot pan for 2 minutes and 1 minute of the other side.

Plate up and squeeze with lemon.
